1 1/4 cups flour1 tsp baking soda1/4 tsp salt1/2 tsp cinnamon & nutmegSprinkle ground ginger3/4 cup brown sugar1/4 cup vegetable oil2 eggs1 cup shredded carrots1/2 cup applesauce1/2 tsp vanillaHandful chopped walnuts
Mix the flour, baking soda, salt and spices. In a separate bowl, mix brown sugar, eggs and oil. Add shredded carrots, applesauce, vanilla and walnuts. Mix the dry ingredients into the wet until will blended. Line muffin tins and bake at 350 for 20-22 minutes.
