Crusty French Bread

1 1/4 Cups Warm Water (105-110 F)4 Tsp Dry Active Yeast6 1/4 Cups Flour1 3/4 Cups Cake Flour3/4 Cups Wheat Germ3 1/2 Tsp Fine Sea Salt1 1/2 Cups Cold Water
1.) Place warm water in stand up mixing bowl. Stir in yeast and 1 tablespoon of flour. Let stand for 5 minutes.
2.) Combine 5 3/4 cups of flour and 1 1/4 cups cake flour with the wheat germ and salt. Add to yeast and pour cold water over it. Combine remaining flour and set aside.
3.) Mix on low (speed 2) with dough hook for 2 minutes. At the same speed mix in 1 tablespoon of the remaining flour at a time until a dough ball forms that clings to hook. Turn speed up a slight bit (3) and mix for another 4 minutes.
4.) Place dough in large bowl and dust with a little flour. Cover with plastic wrap and let rise for 1 hour. Punch dough down and recover. Let rise for another hour.
5.) Punch dough down and divide into 3 pieces. Shape each into a long narrow loaf(14-16"long) and place on a baking sheet lined with parchment paper. Cover and let rise for 1 hour.
6.) Preheat oven to 425. Dust loafs with flour. Taking a knife, slice 4-6 lines on top of loaves. Bake for 25-30 minutes and cool on wire rack.
*Makes 3 loaves at 12 servings each
