lower fat bacon cheddar quiche

3 eggs ( I use egg lands best)1 1/3 cup evaporated skim milk2 cups reduced fat shredded cheddar cheeseblack pepper2 cloves garlic1/4 cup onion diced1 cup shredded spinach leavesprepared 9 in pie crust4 pieces turkey bacon1 tbsp olive oil
1. Cook bacon in non stick pan.
2. Saute in small amount of oil garlic, onions, and spinach.
3. In a separate bowl, combine eggs, milk, and cheese.
4, Stir in bacon and spinach /onion/garlic mixture.
5. Bake pie crust for 8 mins at 400 degrees.
6. Pour egg mixture into partially cooked pie shell. Bake at 375 degrees for 45-60 minutes . Quiche will be firm and not runny when done.
