Healthy Pumpkin Pankcakes

Ingredients
2 eggs1 3/4 cups unsweetened almond or soy milk1/4 cup unsweetened applesauce1 cup pumpkin puree1 cups whole wheat flour15 oz can of great northern beans2 tbs splenda2 tbsp baking powder1 tsp baking soda1tsp salt1 tsp cinnamon1 tsp pumpkin pie spice
Directions
Mash the beans into a puree
Mix eggs, milk, applesauce, pumpkin and mashed beans.
Add dry ingredients and mix well.

Serving Size: makes 8 hearty pankcakes
