Chicken Bake

1 pkg (6oz) low sodium stuffing mix for chicken 1-1/2 lbs bonless skinless chicken breast, cut into 1 inch pieces1 can (10 3/4 oz.) reduced-sodium condensed cream of chicken soup or cream of onion soup1/3 cup fat free sour cream1 bag (16 oz) frozen mixed vegetables, thawed and drained1 cup hot water
PREHEAT oven to 400*F sprinkle 1/2 cup of the dry stuffing mix evenly onto bottom of 13x9 inch baking dish; top with chicken.
MIX soup, sour cream and vegetables; spoon over chicken. Set aside.
ADD hot water to remaining stuffing mix; stir just until moistened. Spoon over vegetable mixture.
BAKE 30 mins or unit chicken is cooked through.
