Spicy Red Lentil Soup

Ingredients
1/2 Tbsp Olive oilCrushed GarlicRed Pepper Flakes1 Lg Onion - chopped3 stalks celery - chopped3 Med Carrots - chopped2 Knorr Ham stock cubes1 1/4 cup Red LentilsWater (approx 4cups)2 Bay leavesSalt & Pepper
Directions
Heat Oil in large pan.
Add crushed garlic and red pepper flakes. Season with salt and pepper.
Add Chopped Vegetables and cook until slightly soft.
Add water to cover vegetables - approx 4 cups.
Ad Stock cubes and bay leaves.
Bring to boil.
Lower heat and add Red Lentils.
Cover and simmer for approx 45 mins. Stir occasionally to prevent lentils from sticking to bottom of pot.
Season with pepper as required.
When Veggies are soft and lentils are cooked, blend using a hand blender.
I like to leave some chunks of vegetables for texture.
