Apple-Crusted Pork with Sweet Potatoes

1 lb pork1/8 tsp salt1/8 tsp pepper3 small sweet potatoes2 McIntosh Apples1 cup Unsweetened Applesauce2 tsp Dijon Mustard1 1/2 tsp ground cumin2 sprays olive oil cooking spray1 tbsp red wine vinegar
This is pretty simple to make.
Preheat oven to 400 F
Place your pork in the center of a baking dish after salt and pepering to taste. Core then dice the apples and cube the sweet potato and place around the pork in the dish. Spray the dish with a coat of cooking spray.
Combine applesauce, vinegar, mustard and cumin and pour over the pork then bake for about 40 minutes. This should yield 3-4 oz of pork and about 1 cup of apple/sweet potato mixture per serving.
