Renee's Lentil-Bacon Soup

5 slices bacon, diced1/2 cup minced onion1 cup chopped celery1 medium carrot1 cup lentils, washed3 cups beef or chicken stock or water2 TBLS cornstarch (optional)1/2 tsp, salt1/4 tsp. pepper2 TBLS fresh or dried parsley
Saute bacon. In two and one-half quart saucepan, bring stock and lentils to a boil. Add onions, celery, carrots, salt and pepper. Cook over med-low heat for about 45 minutes or until tender. For a thicker soup, slowly stir in cornstarch with one-quarter water. Decorate with parsley.
