Simple Pumpkin Soup

Ingredients
2 slices bacon, chopped1 onion, chopped1 29-oz (large) can pumpkin3.5 cups low-sodium chicken broth1 cup applesauce (low-sugar preferred)2 tsp ground ginger1/2 cup light sour creamSalt & pepper to tasteOptional: a sprinkling of pumpkin pie spice is tasty in this!
Directions
Saute 2 slices chopped bacon and 1 chopped onion; drain fat.

Add one 29-ounce can pumpkin, 3 1/2 cups low-sodium chicken broth, 1 cup applesauce, and 2 teaspoons ground ginger. Mix well.

Add salt and pepper to taste; bring to boil. Simmer for at least 10 minutes to let flavors combine.

Add 1/2 cup light sour cream just before serving.

Serving Size: Makes 4 large servings (approximately 1.25-1.5 cup each)
