Roasted Delicata Squash Salad

4 delicata squash, seeded and sliced ¼” thick(2 t plus 2 T olive oil, divided)(1 t cumin)(½ t kosher salt)(2 t butter)½ medium red onion, thinly sliced(1 T balsamic vinegar)2 c baby spinach
Heat oven to 400° F. Place squash on baking sheet. Cook for 10 minutes or until tender. Combine 2 t olive oil, cumin and salt. Drizzle over squash. Heat butter in skillet. Add onion; cook until soft and slightly caramelized. Combine remaining 2 T olive oil and balsamic vinegar. Dress squash lightly with mixture. Toss with onions and baby spinach.
