Chicken, Hominy, and Sweet Potato Soup

1 lb Chicken, bite size pieces2 tbsp butter1 large sweet potato, sliced2 c chopped onion2 Serrano peppers, halved and seeded1/2 tsp coriander1/2 tsp cumin3 c chicken broth1 14.5oz can hominy, drained and rinsedsalt and pepper to taste
Cook chicken in a large saucepan with butter until no longer pink, remove chicken and set aside. Reserve drippings in pan.
Add sweet potato, onion, serranos, coriander, and cumin. Add 1.5 c of chicken broth. Bring to a boil, then cover and simmer for 20 minutes or until veggies are very tender. cool slightly.
Spoon sweet potato mixture into blender and blend until smooth. Return to pan and add chicken, remaining 1.5 c broth, and hominy. Heat through. Salt and pepper to taste.
