Barley Soup

Ingredients
1/2 cup cut up carrot1/2 cup cut up celery1/2 cup chopped onion1 clove minced garlic3 1/2 cups canned diced tomatoes4 cups beef broth or bouillon8 cups water1 bay leaf1 teaspoon basil1 cup raw pearl barley1 1/2 cups mixed vegetables, frozen or canned and drained.
Directions
Mix all but barley in stockpot. Bring to a boil, add the barley and simmer for about an hour until barley is cooked. Remove bay leaf before serving.

Season with salt and pepper as desired.
