Mexican Chocolate Rice Pudding

Ingredients
1/3 cup arborio rice3 cups water1 cup pineapple juice1/3 cup cocoa powderpinch each of cinnamon, nutmeg and allspice2 tbsp honey1/4 of a 1.2 oz dark chocolate candy bar1/2 tsp vanilla
Directions
place rice, water & pineapple juice in pot over medium heat. When it comes to a simmer turn to low. Stir occasionally. After cooking 20 minutes, add cocoa powder and spices. Add hot water if necessary. Stir. Cook 20 minutes more. Add honey. Just before serving add chocolate and vanilla. Can serve hot or cold.
