Chili Cheese Fries

Ingredients
12 ounces frozen shoestring French fries* 2 cups chili1/2 cup shredded reduced-fat sharp cheddar cheese1/4 cup yellow onion, diced fine* We like sweet potato fries!
Directions
Preheat the oven to 450 degrees Fahrenheit.
Spread the fries on a baking sheet in a single layer and bake for 8 minutes.
Meanwhile, reheat the chili on the stovetop or in the microwave.
Remove the fries from the oven and reduce the oven temperature to 300 degrees.
Divide the fries into four oven-safe dishes. Top each portion with 1/2 cup chili and 2 tablespoons cheese, then bake until the cheese has melted, about 2 minutes.
Remove from the oven and sprinkle each portion with one tablespoon onions.
Caution: dishes will be hot!
Serving Size: Makes 8 servings as a snack, 4 as a meal

    Much better to make fresh organic sweet potato fries! So easy: just scrub then slice the potato in the shape of fries. Toss with extra virgin olive oil and put in oven at 375 for 25 minutes! - 4/29/13

    Regarding the question about sodium: I would use leftover homemade chili. I make it pretty low-sodium. I'm going to try this next time I have leftover chili. Sounds great, especially with sweet-potato fries, and serve with a mixed-green salad. - 4/29/13

    If you really feel the need to indulge, but don't like spicy stuff - this is also a great way to use up the last few spoonfuls of that lovely gravy that's left-over after dinner and usually just has to be thrown out!
