Black Jack Cocoa Cupcakes

1 1/4 cups all purpose flour1/2 cup barley flour (or more AP)3/4 cup cocoa powder2 tsp baking soda1 tsp baking powder1 tsp saltpinch ancho chili pepperpinch black pepper2 tbsp dried whole egg powder2/3 cup brown sugar2/3 cup sugar1 cup strong black coffee, cooled1 1/2 cups buttermilk1/4 cup melted, salted butter1/4 cup canola oil1 egg, beaten1 tsp vanilla
Preheat the oven to 350F and line 21 cupcake wells.
In a bowl whisk together the flours, cocoa, baking soda, baking powder, salt, ancho pepper, black pepper and egg powder.
Stir in the sugars, coffee, buttermilk, butter, oil, egg and vanilla, beating well.
Spoon into tins and bake 25 to 30 minutes.
Cool in the tin for 10 minutes, then unmould onto a rack and cool completely.
