Cranberry-Almond Oatmeal Cookies

1 cup canned pumpkin.25 cup applesauce, unsweetened.5 cup Splenda brown sugar2 eggs2 tsp vanilla extract1.5 tsp almond extract1.5 cups whole wheat flour1 tsp baking soda2 tsp cinnamon.25 tsp salt3 cups oatmeal1 cup dried cranberries.5 cup sliced almonds, coarsely chopped
Preheat oven to 350 degrees
Beat together pumpkin, applesauce, and sugar
Add eggs, vanilla extract, and almond extract and beat well
Add flour, baking soda, cinnamon, and salt and mix
Stir in oats, dried cranberries, and almonds
Drop by rounded spoonfuls on ungreased cookie sheet and flatten each cookie
Bake 10 minutes
Cool on rack
Serving Size: 48 cookies, about 2 inches in diameter
