Banana Oatmeal Muffins

Ingredients
3/4 c. whole wheat flour3/4 c. white flour1/4 c. sugar, granulated1/4 c. brown sugar1 c. oats2 tsp. baking powder1 tsp. baking soda1/2 tsp. salt1 egg1/2 c. unsweetened cinnamon applesauce3/4 c. low-fat milk1/2 tsp. vanilla extract3 bananas, mashed3/4 tsp. cinnamon
Directions
In a small bowl, combine flours, sugars, oats, baking powder, baking soda, cinnamon and salt.
In a large bowl, add egg and slightly beat. Stir in milk, applesauce and vanilla. Add the mashed banana and whisk thoroughly. Add the flour mixture into the wet ingredients and mix until just combined. Lightly spray mini muffin tin and fill cups 3/4 full. Bake at 375 degrees for 8-10 minutes or until toothpick comes out clean. Yield: 60 mini muffins
