Potato Soup

Ingredients
6 strips bacon, diced1 med. onion, chopped2 1/2 lbs. potatoes, peeled and diced2 med. carrots, diced4 stalks celery, diced3 c. water1 1/2 t. salt2 c. skim milk2 c. evaporated 2% milk1/2 t. pepperparsley
Directions
Cook bacon and onion in microwave between paper towels. Put bacon, onion, potatoes, celery, carrots and water in stock pot, cover and cook till veggies are tender. Drain water. Put 1/2 potato mixture and the skim milk in blender. Puree. Return to rest of potato mixture in pot. Add evaporated milk and pepper. Heat 15 minutes. Garnish with parsley. Serves 8.
