Bratwurst and Potato Soup

Ingredients
1 Tablespoon Butter (I used Smart Balance)1 Cup Onion, Chopped1 Cup Carrots, Shredded1 Large Potatoe, Diced1-1/2 Cup Chicken Broth12 Ounces or 4 Links or Cooked & Sliced Bratwurst2 Dashes of Salt & Pepper to your taste
Directions
Boil bratwurst until done & slice & put aside.
Melt butter in large pot over medium high heat.
Saute onion & carrots & a little salt & pepper for a few minutes until soft & tender.
Add potatoes, broth & cooked bratwurst to the pot.
Season with salt & pepper.
Cover & simmer for 20 minutes or until potatoes are very tender.
Remove bratwurst and puree or mash the potatoes until soup is nice & thick but still has a few chunks of potatoe.
Add bratwurst back to the pot.
