Cranberrry Gelatin Mold

Ingredients
1 large box gelatin (pick a flavor)1 cup hot water2 - 3 pkgs sugar substitute1 tsp lemon juice3/4 cup unsweetened pineapple juice1/4 cup water1-1/2 cup ground cranberries2 apples, diced1 cup drained, unsweetened pineapple1-2 stalks celery, diced
Directions
Dissolve gelatin and sugar substitute in hot water.
Add lemon juice, pineapple juice, and 1/4 cup water.
Let set. Stir in fruits and celery.
Pour into a mold. 1/8 equals 1 serving.
Hint: To grind cranberries freeze first, then put into blender/food processor and chop.

    Great recipe but I modified it a bit. All the fruit is too much for 1 box of jello - could add another small box to help the ratio. I did use one large box of jello and cut it down, using 3/4 of an apple, 1 stalk celery and I added a handful of dried cranberries with the pineapple. - 8/29/08
