Spanishish Yellow Rice-Abi Style

Ingredients
3 cups uncooked long grain white rice6.5 cups water1 tablespoon extra virgin olive oil1.5 packets of Sazon Goya with Safron ("con azafran").5 tsp salt1 tablespoon each garlic powder and onion powder.5 cup each green and red sweet bell peppers.5 cup chopped fresh onion.5 cup chopped fresh cilantro (or 2 tbsp dry cilantro)15 jumbo black olives, chopped small1 can of low sodium diced tomatoes, drained or 1 cup fresh diced tomatoes
Directions
In a large pot (that has a fitted lid), combine dry rice with water, along with all the ingredients. Stir well, and cover the pot. DO NOT REMOVE LID UNTIL COOKING PROCESS IS COMPLETE IF YOU DO NOT WANT CRUNCHY RICE! I learned this the hard way! Ha! Turn burner up to high. Once you hear the pot boiling (usually after about 5-6 minutes), reduce heat to medium-low, and cook for about 20 minutes. Turn off the burner and let rice sit for about 10 additional minutes as the burner cools down. When the time is up, stir and fluff the rice with a fork.
