Ingredients
Pork Tenderloin, 500 grams Fennel seed, gruond 1 tsp Oregano, ground, 2 tbsp Rosemary, dried, 1 tbsp Garlic, 4 clove Dill weed, dried, 1 tsp Lemon Peel, 1 tbsp *Lemon Juice, 1 lemon yields Olive Oil, 1 tbsp
Directions
1. In a mini food processor or blend, blend together all ingredients, except for pork.
2. Rub spice mix on prok, cover with plastic wrap and refrigerate for at least 1 hour and up to 24 hours.
3. Pre-heat oven to 375F. Roast pork in centre of over for 40-45 minutes, or until meat thermometer reads 165F when inserted into centre of roast.
4. Rest, covered in foil, for 5 minutes before slicing.
