BC's Impossibly Easy Ham & Cheddar Pie Cups

Ingredients
1 1/2 cups cut-up cooked ham 1 cup shredded 2% Cheddar cheese (4 oz) 4 medium green onions, sliced (1/4 cup) 1 medium cooking apple, peeled, chopped (1/2 cup) 1/2 cup Heart Healthy Bisquick® mix 1 cup skim milk 1/8 teaspoon pepper 1/2 cup egg substitute (like Egg Beaters)
Directions

Heat oven to 375°F. Spray 12 regular-size muffin cups with cooking spray or grease them to ensure release.

Mix ham, cheddar cheese, green onions, and apple in one bowl.

In second bowl, mix Bisquick, milk, pepper and egg substitute.

Spoon 1 scant tablespoon baking mixture into each muffin cup. Top with about 1/4 cup ham mixture. Spoon 1 tablespoon baking mixture onto ham mixture in each muffin cup.

Bake 25 to 30 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes. With thin knife, loosen sides of pies from pan; remove from pan and place top sides up on cooling rack. Cool 10 minutes longer, and serve.
