Carrot and Egg Quick Quiche (No Crust)

1 Tbsp Butter1/2 small onion, chopped1 cup grated carrots 1/2 tsp salt1/2 tsp curry powder 4 eggs2/3 cup skim milk1 cup shredded mozzarella cheese
1. In a skillet, heat butter over medium heat. Add onion and saute for 5 minutes. Add carrots, salt and curry powder, cook for 5 minutes or until golden brown.
2. Meanwhile, in a medium bowl, whisk together eggs and milk; stir into vegetable mixture. Continue cooking on medium heat until the bottom of the mixture starts to brown and the top just starts to set. Bake in preheated over for 15 minutes.
3. Remove quiche from oven. Top with cheese. Return to over and broil until cheese is melted. Cut into wedges and serve
Serving Size: Makes 8 Medium Pieces or 4 Large Pieces
