Beets salad

Ingredients
8 medium sized beets, cleaned and cutwater1 tbsp salt1/2 cup olive oil4 tbsp vinegar or as much as you prefer
Directions
Clean the outer part of the beets and cut them in quarters. Put them in a pot and enough water to cover them. Let them boil for 30 minutes or until a fork can go through them easily without them being too sauggy. Drain the water and cut them in 1/4 to a 1/2 ins. thick slices. In a bowl combine the vinegar, salt and olive oil. Pour over the beets and stir to coat them well.

    I love beets, but grew up with the canned beets. I recently bought fresh beets from the farmer's market to give this recipe a try. All I can say about this recipe is YUM! I ate it by itself, and I must say, I can't wait to have more! :) - 7/25/09
