Creamy Reuben Soup

1/2 cup chopped onion1/4 cup chopped celery1/4 cup chpped green bell pepper1/4 cup butter, cubed1 cup beef broth2 cups half and half cream1/4 lb corned beef chopped3/4 cup sauerkraut, rinsed and well drained1/4 tsp salt1/4 tsp black pepper1 cup (4 oz.) shredded Swiss cheese
In a large saucepan, saute onion, clelery and green pepper in buktter until tender.Add broth, bring to a boil, cook and stir for 2 minutes. Reduce heat to low. Add the cream, corned beef, sauerkraut, salt and pepper; heat through (do not boil). Stir in cheese until melted. Serve.
