Coconut Chicken Nuggets

Ingredients
1 lb chicken tenders, ground1 large egg yolk1 tsp onion powder1/4 tsp garlic powder1/4 + 1/2 C almond flour1 oz unsweetened shredded coconut1/2 C coconut oilSalt & pepper to taste
Directions
Preheat oven to 375 degrees.

Combine 1/4 C flour, coconut, salt and pepper in bowl. In separate bowl, combine ground chicken, 1/2 C flour, egg, onion powder, garlic powder, salt and pepper.

Form 1 oz balls of chicken mixture then roll in coconut/almond flour mix.

Heat oil on medium in skillet. In small batches cook nuggets on each side for about 3 minutes. Transfer to sheet pan and place in oven for 4-5 minutes to cook through.

Serving Size: 1 oz (2-3 pieces)
