Applesauce Carrot Cake Cupcakes

Ingredients
1 1/2 cups sugar1 cup applesauce1/4 cup canola oil3 eggs2 cups all purpose flour1 1/2 tsp cinnamon1/4 tsp grond nutmeg1 tsp baking soda1 tsp vanilla3 to 4 cups shredded carrots1 cup corsely chopped nuts (walnuts)
Directions
Heat oven to 350. Grease cup cake pans/liners. Mix sugar ,oil, & eggs in a large bowl until blended: beat 1 minute. Stir in remaining ingredientsexcept carrots & nuts: beat 1 minute. Stir in carrots & nuts. You can add about a 1/2 cup raisins if desired. Bake 30 to 40 minuts.
