Introduction

Ingredients

    3 large bananas
    3/4 cup granulated sugar
    1 egg
    1 tsp baking soda
    1 tsp baking powder
    1/2 tsp salt
    1 1/2 cups all-purpose flour
    1/3 cup melted butter or unsweetened applesauce (recipe calculated using applesauce)
    Chocolate chips (to taste--1 cup calculated)

Tips

My sister-in-law experimented with many different recipes to get this right. She is a great cook and we all love her muffins. This can also be put in a bread pan to make banana bread.


Directions

Mash bananas
add sugar and egg
add melted butter
add dry ingredients
mix in chocolate chips
Bake for 18 - 20 minutes at 375

** I use applesauce in place of butter to make it more healthy/less calories and they still taste REALLY good and I use whole wheat flour. These are delicious muffins, hey anything with chocolate chips usually is.

***To get 24 muffins, I do not fill the muffin tins. I usually fill them about 1/2 way or less.

    How many calories is the recipe with the unsweetened applesauce (since it's less than when you use butter)? Is it 103 calories with the applesauce or butter? - 7/6/09

    when I plugged in the ingredients I used the applesauce and wheat flour...so that's where the 103 came from.

    These are DELISH!!! I just made a batch, 12 med size muffins. I used 2 very ripe bananas, the applesauce instead of oil, and 1/2 cup of dark chocolate chips. Mmmmmmmmmmm!!! I'm freezing the rest before I cave in for more. Next time, I'm going to try making them gluten free. Definite keeper! - 6/3/08

    These were very good, however to get 24 muffins they are pretty teeny tiny. I may double the recipe and make 24 normal size muffins, because they are definitely good. I only used 3 T of semi sweet choc chips and it was enough. Oh and I also just used 1/2C of sugar and they were plenty sweet. - 10/13/08

    These were good! I made some modifications:
    *I used 4 bananas since I had 4
    *I used whole wheat flour
    *I used coconut oil instead of butter
    *I only used 1/3C sugar (raw cane sugar)
    *I added chocolate chips

    ==> about 200 calories/muffin (made 12)

    I forgot to add the chocolate chips and subbed splenda for the sugar but these were awesome!! I would recommend not using paper liners in the muffin tins, I did and they stuck but I'm sure if I just Pammed the pan they wouldn't have. - 4/9/09
