Corn Bread without flour

Ingredients
Directions
2 cups of cornmeal1 - 1/2 teaspoons of baking powder1 teaspoon of baking soda1/3 cup of splenda (optional)1/2 cup of fat free sour cream1 - 1/2 cups of 2% milk1/2 can of cream corn2 tablespoons of canola oil1/4 cup of egg beaters or 2 eggs, lightly beaters.
Preheat the oven to 450:
Combine all the dry ingredients in a large bowl.
In anouther bowl, beat together the egg beaters, milk, sour cream, corn, and canola oil.
Combine the liquid ingredients with the dry, just enough to moisten it.
Pour into an 8x8 inch pan sprayed with pam.
* I make 6 Jumbo muffins with it.
Bake 15 minutes or until it feels cooked to the touch.
** sometimes I add 1 cup of grated cheddar cheese ( Low fat)
and chopped Jalepeno peppers, to taste.
I usually serve it with Chili!
