8 cups chicken broth12.25 cups dried green split peas1 cup chopped red potatoes (about 3 potatoes)1 cup chopped carrots (3-4 carrots)1 finely chopped yellow onion4 cloves minced garlic1 tsp salt1 tbsp butter3 tbsp olive oil1 tsp oregeno1 tsp black pepper1/4 cup grated parmesan (optional)
saute onion and garlic in oil and butter with oregano, salt, and pepper until onions are translucent. add all other ingredients and simmer for approx an hour and 20 minutes. use immersion blender if smooth texture is desired. stir in parm at the end if desired.
