AM's Vegetable Soup with Beef Broth

Ingredients
3 Tbsp. olive oil1 red onion, chopped3 cloves garlic, minced2 stalks celery, diced1 orange bell pepper, diced1 scant tsp. cayenne pepper (less if you don't like spicy!)1 tsp. ground turmeric1 Tbsp. dried rosemary1Tbsp. dried thyme1 bay leaf64 oz. (2 32 oz. cartons) fat free beef broth, 50% less sodium8 oz. French green beans (haricot verts)3 cups cauliflower3 cups red cabbage, chopped
Directions
In an 8-quart stock pot, over medium heat, sautee onions and garlic in olive oil until soft (not brown). Add spices, celery, and bell pepper and stir until vegetables are coated with spices and begin to soften. Add broth , then add green beans, cauliflower, and red cabbage. Stir and cook over medium-low heat for 60 minutes.
