rice noodles & eggs

Ingredients
1 cup rice noodles1 small yellow onion. chopped1/4 bunch green onion, chopped1 cup liquid real egg product2 oz feta cheese
Directions
soak rice noodles in hot water until soft. saute in olive oil 2-3 mins. Add yellow onion and saute till translucent. add green onion. push to the side of the non-stick pan and pour liquid egg on other side until semi-set. move vegetables and rice noodles onto eggs omelet-style. sprinkle with feta, heat a few seconds longer and serve. sprinkle with additional feta.
