Basic Chicken Casserole with Ritz

3-4 Cups Cooked and Chopped Chicken - I prefer a garlic-herb marinade and for it to be roasted1 can Campbells Cream of Chicken and Mushroom Soup8 oz. Non-Fat Greek Yogurt, Plain*1 tsp SaltPinch of Pepper2 Sleeves of Ritz Crackers, Crushed2 TBS Parkay Margerine
Preheat oven to 350*
Chop cooked chicken and set aside.
Combine soup and yogurt in a bowl, mix well. Fold chopped chicken into the mixture and then place it in a 9x13 pan.
Add Salt and Pepper to your liking.
In a large frying pan, melt butter and then add crushed Ritz. Stir often- don't want to char it, but make it a nice toasty color. Remove from frying pan and place evenly on top of casserole.
place in oven for 25 minutes or until middle is done.
Let sit for few minutes and presto! a great comfort food for cold nights:-)
