Sweet & Sour "Beef" & Cabage Soup

Ingredients
3 garlic cloves, finely chopped1 medium onion, finely chopped4 carrots, peeled, cut into 1-inc chunks3 celery stalks, cut into 1-inch slices5 tsp vegetable bullion clubs5 cups water1/2 head cabbage, shredded (~ 1 lb.)1/2 lb. soy beef crumbles2 cups crushed canned tomatoes6 tablespoons lemon juice3 tablespoons Splenda brown sugar2 tablespoons chopped fresh dill1/2 teaspoon fresh thyme1 teaspoon freshly ground pepper
Directions
In a 4 quart pot, cook garlic, onion, carrots, celery and 1/2 of the water and bullion.
Add the cabbage, "beef" crumbles, and the remaining water and bullion. simmer for 15 minutes.
Add tomatoes, lemon juice, brown sugar, dill, thyme, and pepper.
Cook for 20 minutes.
Makes 8, 1 cup servings.
