1 large onion, chopped3 Garlic Cloves 1 medium eggplant cut into 1/2 inch cubes1 Green Bell Pepper cut to half inch pieces1 Red Bell Pepper cut into half inch pieces1/2 Serrano pepper (use whole if you like it spicy), chopped finely2 zucchinis, slices in 1/4 inch slices1lb or more of flavorsome tomatoes chopped roughly2 tbs olive oilSalt and pepper
Heat up olive oil in a deep casserole.
Sauté onions and chili pepper for a few minutes
Add peppers and garlic (with a garlic press) and sauté for about 5 - 10 minutes
Add eggplant and sauté again for 5 - 10 minutes until they begin to soften.
As you add each ingredient stir the mixture well and often.
Add zucchini and finally tomatoes.
Add salt and pepper to taste and simmer, covered for 30 minutes or so until cooked.
Serving Size: Makes 4 - 6 servings
