Creamy Rice Pudding

Ingredients
2 cups water1 cup white rice, medium or short grain1 teaspoon cinnamon2 cans (12 fl. oz.) Evaporated Lowfat 2% Milk1/2 cup raisins1 1/2 teaspoons vanilla extract1/4 teaspoon salt2 large eggs, slightly beaten1 pinch ground cinnamon2 tablespoons coconut oil1 cup splenda
Directions
PLACE water,salt and rice in small saucepan; bring to a boil. Reduce heat to low; cover. Cook for 12 to 15 minutes or until liquid is absorbed. Stir in evaporated condensed milk, splenda, raisins, vanilla extract and cinnamon; bring to a boil. Stir a small portion of rice mixture into eggs. Add egg mixture to rice mixture; mix well with wire whisk. Bring to a boil. Cook, stirring constantly, for 2 minutes, add 2 tablespoons coconut oil and stir. Serve warm or chilled. Sprinkle with cinnamon before serving.
