Crock Pot Curry Lentils with Tofu

1/2 block Firm Tofu 1 cup dry red split lentils1.5 cup vegetable broth1 large onion4 cloves of garlic1 "inch" grated fresh ginger1 tablespoon olive oilspices:1 tsp cumin1 tsp tumeric1 tsp coriander1 tsp ground ginger1 tsp curry powder1 tsp salt.5 tsp ground cloves.5 tsp cinnamon
1. Heat 1 tbsp olive oil in a pan. Chop onion, mince garlic, and grate ginger, put in the pan, and sautee on medium low heat for about 10 minutes.
2. While you do this, mix the spices together. Then add the spices to the sautee.
3. Chop up the half a block of tofu into small cubes.
4. Add dry cup of lentils to the crock pot. Pour spiced onion/garlic/ginger mixture and 1 cup of broth over the dry lentils. Add tofu. Stir.
5. Cook in the crock pot for about 6 hours.
Serving Size: makes 4 servings
