Whole Wheat Pizza Crust

Ingredients
1 pkg Active Dry Yeast1 cup warm water1 1/2 cups Whole Wheat Flour1 1/2 cups White Flour2 tsp Stevia in the Raw1/2 salt2 TBS olive oil
Directions
Dissolve yeast in warm water. Allow to foam for about 5 minutes. Stir together whole wheat flour, stevia, white flour, salt, and olive oil. Add yeast and water mixture. Mix and knead together for 5 minutes using a mixer and a dough hook until the dough is smooth and elastic.
Grease a medium size bowl. Place dough in bowl and turn to coat. Allow to rise until nearly double in size (for about one hour). Divide dough into five equal parts. Using a rolling pin, roll each dough ball into a 10 inch round. Brush or spray with olive oil. Pre-bake the naked crust in a 500 degree oven for about 5 minutes until the crust appears dry. Add sauce and toppings as desired, and return to oven and bake on the lowest station of the oven until the toppings are melted.
