Beans & Pumpkin Soup

Ingredients
3 C chicken broth1 C pumpkin1 3/4 C white beans3 cloves of roasted garlic ( home recipe)1 onion Parsley and marjorame to tastesalt and pepper to taste
Directions
Bring a very large pot sprayed with nonstick spray to medium-high heat on the stove. Add onion, and garlic. Stirring often, cook until veggies have slightly softened, 6 - 8 minutes. Add pumpkin and parsley, stir for 2 more min. To the pot, add chicken broth, herbs and pepper. Add water if desired. Stir well.

Cover pot and bring contents to a boil. Reduce heat to low, and let simmer, about 15 minutes

Serving Size: 4 bowls of (1 1/2 cup aprox)
