White Bean Caprese Salad

4 oz Bufalo Mozzarella, diced2 cups tomatoes, finely chopped1 cup white beans, drained and rinsed2 cloves garlic, crushed/minced1/2 tbsp Extra Virgin Olive Oil (the best you can afford)1/2 Cup basil leaves, chopped
Combine all ingredients. Allow flavors to marinate at least one hour, preferably overnight. You'll want to bring the salad back to room temperature if you decide to refrigerate, to allow the flavor of the tomatoes to come out.
