2 lbs carrotsspray soil2 Tbsp olive oil1 Tbsp za'atar spice blend1/4 c parsley4 oz feta crumbles (reduced fat)
Cut carrots lengthwise into quarters. Spray with oil, place on cookie sheet, sprinkle with salt to taste. Roast carrots at 425F for 30 minutes. Cut into 1" chunks, mix with olive oil, za'atar, parsley & feta. Serve to enthusiastic eaters!
