Ingredients
4 chicken cutlets- 5 oz eachjuice of 1 lemon2 tbsp olive oil1 tbsp salted butter1 cup chicken broth3 tbsp flour1 eggsalt and pepper to taste
Directions
salt and pepper the cutlets. Beat an egg,set aside. Put 2 tbsps of the flour in a dish. Flour each cutlet, coat with the egg then flour again. Repeat for all cutlets. Saute cutlets in the hot olive oil and cook until almost done. Remove when the cutlets are golden brown. Be careful not to burn them. Thinner cutlets will require less cooking time. Remove cooked cutlets from the pan. Add the butter and melt. Add the remaining tbsp of flour then stir. Once flour is dissolved add the juice of one lemon then the cup of broth. Stir all the bits from the pan until sauce comes to light boil and thickens. Season with more salt and pepper to taste.
