Braised Chicken over Biscuits

2 strips bacon1 tsp olive oil2 chicken legs, bone in-skin off2 chicken thighs, bone in -skin off2 chicken breasts-bone in-skin off, cut in half16 medium baby carrots, chopped2 stalk of celery, chopped1 cup onion, chopped1 Tsbp flour2 cups chicken stock1 cup heart smart biscuit.3 cup skim milk
Cook bacon in 1 tsp olive oil in a dutch oven. Remove bacon. Add chicken and brown on all sides. Remove chicken. Add chopped veggies and cook until soft. Sprinkle with flour and cook one minute. Add chicken stock. Add back chicken and bacon. Cook on low, covered, for 30 minutes. Cook uncovered for 15 minutes or until gravy is thickened. Serve over biscuit.
For biscuits: MIx bisquik and milk. Drop 4 biscuits on baking sheet. Bake 450 for 7-9 minutes.
