Green Pea Soup

Ingredients
2 10-16 0z package of frozen Green Peas - or use fresh1/2 Large Sweet Onion -chopped3 Cloves Garlic - minced2 Stalks Celery - chopped1 Tbsp Olive Oil or Coconut Oil4 Cups Vegetable Broth (Low Sodium)4-5 small fresh Mint LeavesDash of Rosemary, basil, dill, sea salt and pepper to tasteGarnish with Greek Yogurt and Mint Sprig
Directions
Heat oil in a large pot, saute onion, garlic and celery. Pour vegetable broth into pot, add peas, and herbs cook on low to medium heat until a slow boil.
Continue to simmer 15 - 20 min. Pour all into Blender, food processor or use a stick blender. Blend til creamy. Heat back up on stove if needed, serve.
Serve with a spoonful of Greek Yogurt and mint sprig to garnish.
