Gingery Butternut Squash

Ingredients
2 onions, chopped2 Tbsp fresh ginger, minced2 tsp oil2 apples, chopped and seeded4 cups of frozen butternut squash4 cups of chicken or vegetable broth
Directions
In large soup pot saute onions and ginger in oil until onion is translucent. Add apples, squash, and broth and bring to boil. Reduce heat and simmer until apples and squash are tender. Puree in blender until smooth. Salt and pepper to taste.
