Applesauce Oatmeal Walnut Muffins

Ingredients
1 C Old Fashioned Oats1 C Almond Breeze Original Almond Milk1 C Flour1/2 C Brown Sugar1/2 C Unsweetened Applesauce1/3 Cup Egg Beaters1 tsp baking powder1/2 tsp baking soda1/2 tsp salt1 tsp cinnamon1/4 C chopped walnuts
Directions
1. Combine oats and almond milk and let sit for 1 hour.

2. Preheat oven to 400 degrees F. Lightly spray muffin pan with cooking spray.

3. Combine oat mixture with applesauce and Egg Beaters and mix until combined.

4. In a medium bowl, combine dry ingredients. Add oatmeal mixture to dry ingredients and mix well.

5. Spoon batter into muffin pan and bake for 20-25 minutes.
