Tofu Curry

Ingredients
1 Package extra firm Tofu1 Clove Garlic1 Can Coconut Milk1 Tbsp. Red Curry Paste1 Red Bell Pepper.5 Lb. Green Beans1 Box Mushrooms (any kind will work)
Directions
Heat 1 Tbsp. vegetable oil in a skillet over med. heat. Add garlic, cook for about 2 minutes and add tofu. Saute until crispy. Set aside.
Dice and add red bell pepper to the pan. Cook for about 2 minutes and add other ingredients. Cook until beans and mushrooms are soft enough to eat.

I serve mine over rice noodles, but it would be great over rice or regular noodles as well.
