Quinoa Pancakes

Ingredients
1cup of Quinoa, cooked3/4 cup flour2 tsp baking powder1/2 tsp salt1tbsp butter, melted1 egg3tbsp egg white, liquid1/4 cup almond milk2tbsp pure maple syrup
Directions
Cook Quinoa according to package directions and let cool. Mix dry ingredients in a large bowl including the quinoa. Mix wet ingredients in a medium bowl. Mix the wet into the dry until smooth. Careful not to over stir. Will look gritty with quinoa. Heat a skillet on med high or a griddle to 350. Drop large spoon fools on griddle. Turn when gets bubbly on top. Cook on other side. Transfer to plate when done.

Serving Size: Makes 6 3-4" cakes or 11-12 silver dollar cakes
