Fat Free Broccoli Soup

Ingredients
24 ounces chopped broccoli 1 1/2 cups baby carrots , chopped finely (9 oz)1 cup onions , finely chopped (4 oz)1 cup celery , finely chopped (3 oz)8 cups fat-free chicken broth1 cup fat-free half-and-half2 teaspoons dried thymeoptional: Reduced fat cheddar cheeseSalt and pepper to taste
Directions

1. In a large pot, add broth, carrots, onion, celery, and spices. Cover and bring to a boil over high heat. Reduce heat to medium/low and simmer until vegetables are tender (about 20 minutes.)
2. Meanwhile, steam broccoli in bags according to package directions. Put the first bag of broccoli in a bowl and mash with a potato masher. Puree the second bag in a food processor and add it to the bowl. Chop the broccoli from the final bag and add it to the bowl.
3. After 20 minutes, add the broccoli to the pot, stir and simmer, covered, for another 10 minutes.
4. Add the fat-free half and half, stir, and heat through.
5. Serve topped with reduced fat cheddar cheese!

    you cannot mess this up. It's great! I put some baby carrots and about 1/3 of a bag of broccoli in the blender to chop. It worked great! I put about in the freezer, I hope it freezes well! - 3/14/10

    Holy Cow! This is so yummy. I made as written and it was perfect. What a wonderful soup! I tried switching the fat-free half & half for shelf stable almond milk. It was not as good and only saved about 8 calories. Try this as written and you will love it! - 1/19/21
